Manage the companys Business performance against audits (Food Safety, Quality Systems, Packaging, Distribution and Transport).
Follow up with Commissary Leaders to close gaps identified in both internal & external audits to drive compliance and continuous improvement.
Document and records to be kept.
Draw up specifications for all products and follow-up with upline Signing off Quality Assurance Programs. Specification and QAP review
Ensure compliance to product cuttings on all Fresh Produce as per standards.
Ensure maintenance & review Monthly Compliance reports. Ensure the units Leaders take the necessary corrective action where needed.
Ensure independent Physio-chemical, Micro & Nutritional analysis is conducted at the frequencies stipulated by the Global QA requirements.
Managing administration, planning QA strategy to achieve compliance for the various units.
Plan and help senior(s) to conduct crisis management training for the various units.
Conduct mock crisis management excercises at prescribed frequency.
Plan and conduct Mock Recall of Raw and Finished Product.
Monitor raw product complaints from restaurants, analyze, plan and implement corrective action.
Help the senior(s) and participate in new product development activities.
Plan for Inspection and audit with QA Manager on GMP, Pest Control, Cleaning & Sanitation, Process Flow, Facility Management, Product Protection, Food Security, Tracking Control of Product, Material & Ingredients.
Giving input into development and operational functions at various units to ensure compliance to Global Food Safety Standards
Plan and arrange for training programs
Participate on FSA, and all units auits as well as with External Auditor.
Participate on Visits, inspection and audit by FDB, GSA, AMA
